  • 1 pound sweet potato with its skin on
  • ½ cup butter nice and softened
  • 1 cup white sugar
  • ½ cup milk
  • 2 large eggs
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 9-inch pie crust unbaked

Preparation

  • Gather all ingredients for your sweet potato pie.
  • Place the whole sweet potato in a pot, cover with water, and boil for 40 to 50 minutes until tender.
  • Preheat your oven to 350°F (175°C). After boiling, cool the sweet potato under cold water, then peel and mash the flesh with butter in a bowl until smooth.
  • Add sugar, milk, eggs, nutmeg, cinnamon, and vanilla to the mashed sweet potato mixture; beat on medium speed until smooth.

Baking

  • Pour the smooth sweet potato filling into the unbaked pie crust.
  • Bake in the preheated oven for 55 to 60 minutes, or until a knife inserted into the center comes out clean. Remove from the oven and let it cool completely before serving.
