  • 3 cups all-purpose Flour
  • 2 teaspoons Baking Soda
  • ½ teaspoon Salt
  • 2 teaspoons Ground Cinnamon
  • 3 medium Size Eggs
  • 2 teaspoons Vanilla
  • 1 cup Unsalted butter softened
  • ¾ cup Sugar add another ¼ cup for added sweetness
  • 1 cup Yogurt
  • 4 medium-sized Ripe Bananas smashed
  • 1 cup Chopped Walnuts

  • Preheat the oven to 350°F (175°C) and grease a 9-10 inch bundt pan.
  • In a large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • In a separate bowl, beat eggs until fluffy, then blend in vanilla, sugar, and softened butter until smooth.
  • Combine the wet mixture with the dry ingredients and mix until well combined.
  • Add yogurt and mashed bananas, then mix thoroughly.
  • Gently fold in the chopped walnuts.
  • Pour the batter into the prepared pan and bake for 50-55 minutes until golden and a toothpick inserted comes out clean.

Notes

For the best flavor and texture, use very ripe bananas with plenty of brown spots. Ensure butter is truly softened for a smooth batter. Store leftover cake in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
