  • 4 chicken breasts boneless, skinless
  • 2 tablespoons minced garlic or garlic paste
  • Kosher salt to taste
  • Black pepper to taste
  • 1 tablespoon dried oregano divided
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup dry white wine
  • 1 large lemon juiced
  • 1/2 cup chicken broth
  • 1 medium red onion finely chopped
  • 4 small tomatoes diced, about 1 1/2 cups
  • 1/4 cup sliced green olives
  • Handful fresh parsley stems removed, leaves chopped
  • crumbled feta cheese optional

  • Pat the chicken breasts dry and make three shallow slits on each side of the chicken.
  • Rub garlic onto both sides of the chicken, pushing some into the slits, then season with salt, pepper, and half of the dried oregano.
  • Heat olive oil in a large cast iron skillet on medium-high heat, sear chicken on both sides, then add white wine and reduce by half.
  • Add lemon juice and chicken broth, sprinkle with the remaining oregano, cover, and braise for 5 to 6 minutes per side, or until the chicken reaches an internal temperature of 165°F.
  • Uncover and top with chopped onions, tomatoes, and olives; cover again and cook for 3 minutes. Finish with parsley and optional feta cheese before serving.

This one-pan recipe is perfect for an easy weeknight meal. Ensure not to overcook the chicken to keep it tender and juicy. Using fresh ingredients will enhance the Mediterranean flavors.
