  • 3 cups all-purpose Flour
  • 2 teaspoons Baking Soda
  • ½ Teaspoon Salt
  • 2 Teaspoons Ground Cinnamon
  • 3 medium Size Eggs
  • 2 Teaspoons Vanilla
  • 1 cup Unsalted butter softened
  • ¾ cup Sugar add another ¼ cup for added sweetness
  • 1 cup Yogurt
  • 4 Medium-sized Ripe Bananas smashed
  • 1 cup Chopped Walnuts

Preparation

  • Preheat the oven to 350°F (175°C).
  • Grease a 9-10 inch bundt pan.
  • Whisk together flour, baking soda, cinnamon, and salt in a large bowl.
  • In a separate bowl, beat eggs until fluffy, then blend in vanilla, sugar, and softened butter until smooth.
  • Combine the wet mixture with the dry ingredients and mix until well incorporated.
  • Stir in the yogurt and mashed bananas thoroughly.
  • Gently fold in the chopped walnuts.
  • Pour batter into the greased pan and bake for 50-55 minutes, or until a toothpick comes out clean.

Notes

Ensure bananas are very ripe for the best flavor and moisture. Do not overmix the batter to keep the cake tender.
