  • ¾ cup Sugar add another 1/4 cup for added sweetness
  • 1 cup Yogurt
  • 4 medium-sized Ripe Bananas smashed
  • 1 cup Chopped Walnuts

Preparation

  • Preheat oven to 350°F (175°C).
  • Grease a 9-10 inch bundt pan.
  • In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  • In a separate bowl, beat eggs until fluffy, then add vanilla, sugar, and softened butter, blending until smooth.
  • Combine the wet and dry mixtures, mixing until well combined.
  • Stir in the yogurt and mashed bananas thoroughly.
  • Gently fold in the chopped walnuts.
  • Pour batter into the prepared pan and bake for 50-55 minutes, or until a toothpick inserted comes out clean.

Notes

Ensure bananas are very ripe for the best flavor and moisture. Do not overmix the batter once wet and dry ingredients are combined to keep the cake tender.
