  • 2 boneless, skinless chicken breasts (about 1.3 lbs. total)
  • 1/2 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1/4 cup all-purpose flour
  • 2 Tbsp olive oil
  • 2 Tbsp butter divided
  • 1 whole garlic bulb (about 8-9 garlic cloves)
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1/2 tsp garlic powder
  • Salt and Pepper to taste

Preparation

  • Fillet each chicken breast into two thinner cutlets using a sharp knife.
  • Season the chicken breasts with Italian seasoning, salt, and black pepper, then sprinkle and rub flour over both sides until evenly coated.

Cooking

  • Heat a large skillet over medium heat with olive oil and 1 Tbsp of butter. Cook chicken until golden brown and cooked through (about 4 minutes per side), then remove to a clean plate and cover to keep warm.
  • While the chicken cooks, peel and carefully smash the garlic cloves with the side of a large chef's knife.
  • In the same skillet, add the remaining 1 Tbsp of butter and the smashed garlic cloves. Sauté on medium-low heat for 3 minutes, stirring frequently, until lightly browned and fragrant.
  • Pour in the chicken broth and heavy cream, then add the garlic powder. Stir and scrape up any brown bits. Simmer for 8-10 minutes until the sauce reduces and thickens by about 50%, then taste and add salt and pepper if needed.
  • Return the cooked chicken breasts to the skillet, spoon the creamy sauce over them, and allow the chicken to heat through. Serve immediately.

Notes

Serve with fresh chopped parsley (optional). For best results, ensure chicken breasts are thinly cut or filleted to cook evenly and quickly. Adjust salt and pepper to taste in the final sauce.
