For the Oatmeal Batter:

  • 3 cups quick-cooking oats
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups packed brown sugar
  • 1 cup softened butter
  • 2 large eggs
  • 2 teaspoons vanilla extract

For the Fudge Filling:

  • 1 (14-ounce) can sweetened condensed milk
  • 1 ½ cups semisweet chocolate chips
  • 2 tablespoons butter
  • ½ teaspoon salt
  • ½ cup chopped walnuts
  • 2 teaspoons vanilla extract

Instructions

Step-by-step instructions:

  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  • Combine oats, flour, baking soda, and salt in a bowl to make the oatmeal batter.
  • In a large bowl, beat brown sugar and butter until fluffy, then mix in eggs and vanilla; stir this into the flour mixture until just combined.
  • Make the filling by heating condensed milk, chocolate chips, butter, and salt in a saucepan over low heat until smooth; then stir in walnuts and vanilla after removing from heat.
  • Press two-thirds of the oatmeal batter into the bottom of the prepared pan, spread the filling evenly over it, then dot with the remaining batter.
  • Bake the bars in the preheated oven for 30 to 35 minutes, then let them cool completely on a wire rack before cutting into 24 bars.

Notes

Ensure bars are completely cooled on a wire rack before cutting to achieve clean slices and prevent crumbling.
