  • 0.5 cup chopped walnuts
  • 0.5 cup raisins
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder

  • Preheat your oven to 350°F (175°C) and prepare a fluted cake pan by spraying it with cooking spray.
  • In a bowl, use an electric mixer to beat sugar and butter until smooth and creamy, then beat in the eggs until fully mixed.
  • In a saucepan, combine applesauce and baking soda over medium heat, stirring for about 2 minutes. Stir this warm applesauce mixture into the butter mixture, then add the vanilla extract.
  • Whisk together the flour, cinnamon, salt, baking powder, and ground cloves in a separate bowl. Gradually stir the wet applesauce mixture into the dry flour mixture until just combined, then fold in the raisins and walnuts; pour the batter into your prepared pan.
  • Bake the cake in your preheated oven for about 1 hour, or until golden and a toothpick comes out clean. Let the cake cool in the pan for 10 minutes, then transfer it to a plate.
