Ingredients

Main Dough

  • 1 cup butter
  • 6 ounces cream cheese softened
  • 2 tablespoons vanilla extract
  • 2 cups all-purpose flour
  • 5 teaspoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 15.25 ounce apple pie filling can, or as needed

For Topping

  • 2 tablespoons sugar or to taste
  • 1 teaspoon ground cinnamon or to taste

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large bowl, beat butter, cream cheese, and vanilla extract until smooth, then mix in flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon until the dough forms.
  • Roll the dough on a floured surface to 1/4-inch thick and use a cookie cutter to cut out 48 circles.
  • Place a teaspoon of apple pie filling on 24 dough circles, cover with the remaining 24 circles, and crimp the edges with a fork to seal; arrange on the lined baking sheets.

Baking & Finishing

  • Bake the cookies in the preheated oven for 23 to 29 minutes, until golden brown, then let them cool for 5 minutes.
  • For the topping, mix 2 tablespoons sugar and 1 teaspoon cinnamon in a shallow bowl, then roll the warm cookies in this mixture until coated before moving to a wire rack to cool.

Notes

Ensure not to overfill the cookies to prevent leakage during baking, and crimp the edges thoroughly with a fork to seal them securely.
